FOR THE FUTURE

 

At Tom Thumb we pride ourselves on being as ethical and sustainably conscious as possible. 

The challenges to this are numerous and sadly some are unavoidable, but where we can, with that little extra effort we are able to make changes for the better.

From sourcing the most ethical and sustainably made spirits, collaborating with other local businesses and using their edible leftovers, growing our own garnishes, using paper straws and re-using old bottles for our home-made creations, to larger actions such as using a 100% renewable energy supplier and organising one delivery a week to reduce our carbon footprint, we truly believe we are having a positive effect.

Our most recent triumph is enlisting the expertise of a new coffee house just down the road. Grounded Coffee was started by a friend who is roasting his own top grade coffee beans. The opportunity to utilise his expertise and have a custom coffee roasted just for us was too enticing to pass up. Add to that we take a leisurely walk down the road to fetch our stock and it shows we really are keeping it local.

 From a cocktail perspective the idea of sustainability is a touch more challenging. 

We are avid foragers and use anything that is prevalent in the area such as gorse, sloe berries, damson, apples, and seaweed.

Citrus is a big part of the cocktail world but we’ve found ways to make a complete circle of using our ingredients in more ways. For instance the pineapple ferment we create uses the skin of the pineapple, whilst the flesh is used in a vermouth infusion and then this infused flesh is dehydrated to make a garnish. Full circle and one step closer to zero waste. 

At the end of the day, every little helps. For the future.
